
If you haven't tried couscous before, this is a great option for side dishes! It soaks up so much flavor from the chicken stock and other stuff...you just can't go wrong with this as a side dish. (It's not vegetarian as is, but if you swap out the chicken stock for veggie stock...BAM!)
I made my "fancy" and added golden raisins and pistachios to go with my Grilled Moroccan Chicken we cooked up for dinner as well...these both go together like PB&J. Enjoy!
GOLDEN RAISIN AND PISTACHIO COUSCOUS
Serves: 2
Ingredients
1 1/2 c. Chicken or Vegetable Stock
1 TBL Unsalted Butter
Salt, to taste
1 cup couscous (can be whole wheat or plain)
1/4 c. Golden Raisins
1/4 c. Shelled Pistachios, chopped
Directions
1. Bring stock, butter and salt to boil
2. Add couscous and stir once or twice. Cover and remove from heat to allow couscous to steam for 5-7 minutes.
3. Add raisins and chopped pistachios, fluff with a fork. Enjoy!
